Although it is not an American Breakfast it is surely my favorite breakfast. A bit on the sweet side but very refreshing. In honor of 4th of July celebration I playfully arranged the American colors. In Germany where I come from this type of breakfast is very common. However, let me explain what my favorite Breakfast with quark is made off. For the bread I recommend whole grain bread although any bread you like is fine. I used ricotta cheese for this recipe, because I couldn’t get any Quark. To complete the American colors I used raspberry jam and blueberry jam. Of course no breakfast is complete without a good cup of coffee. Quark is very difficult to get here in the US and usually only available in German food stores for a whopping $ 5 for not even ½ lb.
To give you a better idea what quark is and what it taste like I will list a few examples how versatile it is:
It taste like ricotta cheese and has a consistency of sour cream, however it doesn’t have a big curd, in fact it is very smooth. I doesn’t taste salty nor sweet, but can adapt to both brilliantly. If you ever had the chance to taste cheese cake made with quark you’ll know what I’m talking about. Quark is likely the most missed dairy product for Europeans in the US.

- 4 Slices of whole grain bread, toasted
- 8 full tbsp Quark or ricotta
- 4 tbsp raspberry jam
- 4 tbsp blueberry jam
- Spread Quark or ricotta cheese over bread.
- With a spoon spread the jam in two parallel lines across the bread.
